Pasta & Patate Al Forno

Pasta and potatoes in the oven

Serves 6


  • 1.5kg potatoes, peeled and cut into medium-sized cubes
  • 500g short pasta (such as penne)
  • 200ml Vesuvio Extra Virgin Olive Oil
  • 1 onion, finely sliced
  • 1 sprig of rosemary, finely chopped
  • Salt and black pepper to taste
  • Parmesan cheese to taste

Place the potatoes in an oven-proof dish.  Drizzle with half of the olive oil.  Add salt, pepper, onion and rosemary. Roast in the oven at 180ºC for +- 2 hours or until golden. Cook pasta “al dente”; dress with the remaining olive oil and Parmesan cheese. Add to the potatoes and return to the oven for half an hour.
