- 1 large roasted chicken, cooled and cut into small pieces
- 600g cooked ham, cubed
- 3 celery stalks, finely chopped
- 6 carrots, cleaned and cubed
- Juice of ½ a lemon
- 60ml Vesuvio Extra Virgin Olive Oil
- Salt and black pepper to taste
Top the chicken with ham and vegetables and dress with the remaining ingredients.
